90s Pistachio-Açai Pops

one more time. These pops are a great marriage between creamy nutty pistachios and luscious açai. Extra bonus points because they look like at least SOMEONE in the late 90s would have worn this as a crop top print.
Pro tip: make these pops and store them in the freezer so you have them at hand when the sun is out and there is no more time to waste in that bloody kitchen.
This recipe is: gluten-free, refined-sugar-free and plant-based.
Açai is an amaaazing source of antioxidants so these treats are good for you too.
Ingredients for 6 small pops
PISTACHIO BASE
1 cup full fat coconut milk
1/4 cup raw pistachio
1 tbsp honey
ACAI BASE
2 packs of frozen açai pulp
1 ripe banana
1/4 cup plant-based milk
1 tbsp honey
splash of lemon juice
How to
1.
Make the pistachio base by blending all the ingredients in a high power blender on high speed, until you get a smooth mix.

Pour the mix in the moulds and freeze for 5 minutes.
3.
Meanwhile make the açai base by blending the rest of the ingredients. No need to clean out the blender here.
4.
Now pour the açai mix on top of the pistachio mix (see, this is easy).

Keep as is or make 90s pop swirls by incorporating the two layers at the sides with the back of a teaspoon or a knife.

If the mix is firm enough, insert the popsicle sticks now. If not, freeze for another 5-10 minutes and then insert sticks.

Freeze for at least 4 hours or until you are ready to indulge
