Extravagant Acai Bowl
Blend it, top it,

Açai berry bowl which to my husband, and I quote, was “the best bowl EVER”. What I do is I make a giant bowl and eat 3/4 + most of the toppings of course, then leave the rest out for him. And he is STILL raving. Sweet. So is this bowl…
As toppings we go for all the beautiful produce the end of summer period has to offer us: stone fruit, plump berries, figs… It is important for your mind to go all out here. Once you have the base, let those creative juices flow. It will make your bowl taste all the better when it looks ravishing too.

Notes
This recipe is: gluten-free, refined-sugar-free, dairy-free and plant-based.
Texture: to make a thick smoothie you will need a bit of patience and a good blender or kitchen robot. It will look like it will not work in the beginning, but lift the lid, stir a bit, and continue to blend. Repeat as many times as necessary. Your patience will be more than rewarded. And once you get the hang of it you will see it doesn’t take a lot of time.
RECIPE BERRY ACAI BOWL
Ingredients for 1
Smoothie base
1/2 cup coconut yoghurt or 1/4 cup plant-based milk
2 frozen bananas
1 giant cup frozen berries (mix)
1 pack pure frozen açai. My favourite is from The Holy Berry.
Toppings / crown jewels
Granola
Fresh figs
Fresh prunes
Blueberries
Blackberries
Shredded coconut
Pomegranate
Almond butter
How to
1.
Take all ingredients out of the freezer at least 5 minutes before you start.
2.
Add coconut yoghurt and then rest of the frozen ingredients to your blender.
3.
Blend and “tamp” to get all the frozen ingredients blended to ice cream consistency. You will need a sturdy blender to make this work (I use a Vitamix)
4.
Add to a bowl and decorate with the crown jewellery it deserves. Dig in.
5.
Top with toasted shredded coconut and dark shaved chocolate. Want to drizzle almond butter on top? I feel ya! Go go go.
