Flamboyant Greens Soup

Who doesn’t love a good swirl right?? This sweet potato and spinach soup will answer all your swirl-prayers. I tapped into the power of my beloved Vitamix to make a creamy green and orange soup and it’s perfect for drowsy weather days that need some extra colourful funk. Super warming, super nourishing, super comforting.

Colourful spinach and sweet potato green soup

You only need a few beautiful ingredients to get started: warming sweet potato, some leeks because any good winter soup will become better with leeks, some bright green baby spinach and some delicious ginger for an extra kick.

You can choose to make this soup 100% green by mixing everything at once, but adding swirls is such a fun way to incorporate more colours in your final dish. Just start by making the “neutral” base with sweet potatoes, then scoop out half and blend it with the more powerfully tinted baby spinach. The result is astonishingly bright in looks and comforting in taste.

Ingredients

  • 2 tbsp olive oil

  • 1 onion

  • 2 garlic cloves

  • 2 tbsp fresh minced ginger

  • 2 sweet potatoes, peeled and diced

  • 1 leek

  • lots of delicious, nutritious baby spinach (about 50g)

  • 1 tsp salt

  • 1 tbsp lemon juice

  • 900ml water


How to

 

1.

Sauté onions and leeks with some salt in olive oil until translucent (5 min).

2.

Add garlic and ginger and stir for 1 min.

3.

Add diced sweet potatoes and the water and bring to a boil.

 

4.

Lower heat and simmer for 15-20 min until potatoes are tender.

5.

Let cool a bit and add everything to your blender (give it a bit of that Vitamix love).

6.

Taste and season with salt, pepper and lemon juice.

 

7.

Take half of the portion out and blend the rest with the baby spinach so you can make beautiful mesmerising swirls.

8.

Top with toasted sesame seeds, pepper and salt and some fresh parsley.
