Strawberry & Cucumber Cooler Smoothie

It dawned on me that smoothies are just sweet gazpachos right? Or are gazpachos just savoury smoothies? Anyways, this smoothie is a summery of summer. Sweet berries, cool cucumbers a dash of mint, all chilling in there with a bunch of ice cubes.

Serve as a refreshing snack or energising breakfast.

 

This recipe is: gluten-free, refined-sugar-free and plant-based.

Peeling the cucumber makes sure the colour of the smoothie is just a tad more bright, but if you want to keep things nutritious (and just as delicious) feel free to leave the cucumber peel on for this smoothie.


Ingredients for 2

  • 2 handful strawberries

  • 1/4 cucumber, peeled

  • 5 mint leaves

  • 1 banana

  • ice cubes


How to

1.

Prepare your ingredients (hull the strawberries, peel the banana, nothing shocking here)

2.

Blend in your blender until smooth.

3.

Serve over ice and top with granola and a sprig of mint.
