Sunshine Tonic

 

Sun’s out, Tonic’s out!

A refreshing feel good tonic. Best enjoyed on breezy afternoons when it’s warm out, or served as a cocktail before your outside dinner party.

It’s packed with oranges (vitamin C!), carrots (vitamin B - skin health!) and a tangy drinking vinegar (fermented goodness!) that ties it all together. Bright, fresh, beneficial, a true sunshiny drink.

All the ingredients work wonderfully well together. Carrots and oranges as the sweet, golden duo, and apple cider vinegar with its tangy punch. As a vinegar I used the Lima drinking vinegar apple, an organic, natural and non-pasteurised vinegar with a great flavour. Because it’s unpasteurised, it still has all the good bacteria that work wonders for the gut. For those that can get their hands on a bottle, I recommend! And if not, you can use another un-pasteurised apple cider vinegar. Let’s get to it!


Ingredients (for 2)

  • 4 organic carrots

  • 1 piece of ginger (2 cm / 1 inch)

  • 250ml coconut water

  • 2 oranges, juiced

  • 4 tsp apple cider vinegar

  • 2 tsp honey (optional)

 

How to

1.

Blend the carrots with the ginger, coconut water and honey in a blender or with an immersion blender.

Combine with the orange juice and then strain through a fine meshed sieve. Make sure to mash the pulp with the back of a spoon to get all those lovely juices out.

3.

Serve over lots of ice and a slice of sunshine orange.
