Vegan Apple Banana Pancakes
You say fruitpap I say pancakes!
“Fruitpap” pancakes aka baby-food for curious adults. Fruitpap is the Belgian babies’ national dish. It’s typically mashed apple, banana and some other fruits like kiwi and oranges. It’s mixed together with some kind of baby cookies and it is seriously delicious.
But sometimes a mashed puree doesn’t cut it, and we need to make it * extra * . Enter these vegan fruitpap pancakes using mashed apple and banana as binders and moisturisers. Pretty genius, I’m aware.
They are easy, naturally sweetened, gluten-free and plant-based. They are also: delicious. Have a taste of the batter while you’re at it, it’ll bring back some memories!
A bit about the ingredients: in stead of cookies I’m using gluten-free oats because I am a responsible adults (and because I ran all out of baby cookies). Gluten-free is great if you’re sensible to gluten. If you’re not… regular oats work just as well.
To provide moisture and binding properties I’m adding the baby-friendly fruit. In stead of just the regular banana you can mix things up quite literally and add apple for a lighter experience. I’m yet to try this with orange and kiwi but I bet those could turn out interesting too.
Further moisturising is provided by a plant-based drink such as the Alpro oat drink I’m using. Further binding is provided by chia seeds. Baking soda will help to aerate things and flavour is provided by cinnamon and my dear friend salt (always add salt, even in sweet recipes).
Then you will just use a blender for minimal effort and maximum results. The only “steps” to this recipe are blending and baking. Now isn’t that interesting. Let’s dive in!
Ingredients
PANCAKES
1 apple
1 banana
1,5 cups of porridge oats
1 cup + 4 tbsp oat drink with no added sugars (such as Alpro)
2 tbsp chia seeds
dash of cinnamon or speculaas spices
a pinch of salt
1 tsp baking powder
TOPPING
plant-based yoghurt alternative such as coconut
a mix of fresh fruits such as berries, kiwi, banana
hemp seeds
maple syrup (optional)
How to
1.
Add chia seeds to 4 tbsp of oatmilk, mix well with a fork and let stand for minimum 5 min.

Blend together with the rest of the ingredients in your blender until creamy smooth.
3.
Heat a little bit of coconut oil in a non-stick skillet on high heat (brush it around with a brush or a bit of kitchen towel).

Lower heat to medium and poor in a few tbsp of the batter. Swirl it around. Don’t make them too thick.
5.
Bake for about 2 min on one side (bubbles will appear👌🏻) then flip and bake for 2-3 min on the other side.
6.
Top with all the toppings your heart desires. The stage is yours my friend!
