Caramel! Chocolate! Crumbly shortbread!

A twix you say? Most def! But healthified. Be careful where you put them after making these because they will be gone before you realise. I put these babies out unsupervised and had to remake everything the day after to take my photos. No one complained. Just saying...

 
Healthier twix bars

This recipe is: gluten-free, refined-sugar-free and plant-based, but it’s full of flavours and the texture is divine. Let’s get baking.


Ingredients

SHORTBREAD

  • ½ cup coconut flour (45g)

  • ½ cup almond flour (45g)

  • 2 tbsp arrowroot (20g)

  • ¼ cup melted and cooled coconut oil (55g)

  • 2 tbsp maple syrup (40g)

  • 1 tsp vanilla extract

  • ¼ tsp salt

CARAMEL LAYER

  • ½ cup almond butter (120g)

  • 3 tbsp coconut oil (40g)

  • 1 tsp vanilla extract (4g)

  • ¼ cup maple syrup (80g)

  • 1/4 tsp salt

CHOCOLATE LAYER

  • ½ cup dark chocolate chips (80g)

  • 1 tbsp coconut oil

  • ¼ tsp flaky sea salt

 

How to

1.

SHORTBREAD FIRST: preheat oven to 180°C. Combine all the ingredients in a bowl. Dump the mix in a square baking pan (20cmx20cm) that you already lined with baking paper. Press down evenly with your fingers. Pierce the crust with a fork before you shove it all in the oven.

Bake for 10 min on 350°F / 180°C then take it out of the oven and let cool slightly so it crisps up nicely.

CARAMEL SECOND: make the sauce by combining all ingredients in a small sauce pan over medium heat, stirring and heating until it’s glossy and bubbly and you can’t stop staring at it.

Let the caramel cool slightly before you pour it over the shortbread. Luscious! Put the whole thing in the fridge for at least 1-2 hours or if you don’t have enough patience (hear hear) you can also put in the freezer for 30 min.

5.

CHOCOLATE & ASSEMBLY LAST: melt chocolate and coconut oil au Bain marie. Pour it over the now-set caramel. Sprinkle with fairy dust and sea salt. Put in the fridge for at least 1 hour.

6.

Cut in halve and then in rectangles. Be quick to take pictures for instagrammy or hide a few in the back of the fridge so you can secretly snack on them before they have disappeared.
