Cereal Banana Pancakes

Cereal pancakes are basically just tiny little pancakes that you serve as you would cereal (in a bowl of milk). They are cute, for sure, and as with all things cute (I think?), they require a bit of tending to.

You’ll be flipping these pancakes for quite a while but keep in mind that in the end you will have a bowl of homemade cereal that your kids and/or inner child will love you for.

 

These pancakes are wholesome and healthified: using banana as the main sweetener and oats to replace standard flour. Yay because: extra fibre, extra nutrients and extra yum.

This recipe is: gluten-free (if you use glutenfree oats), dairy-free and refined sugar free.


Ingredients

  • 2 very ripe bananas

  • 2 eggs

  • 1/2 cup unsweetened plant-based milk of choice (I used coconut)

  • 1 tsp vanilla extract

  • 1 + 1/2 cups of rolled oats (glutenfree if needed)

  • 2 tsp baking powder

  • 1/4 tsp salt

  • olive oil, for frying

 

How to

1.

Blend all the ingredients (except the olive oil) in the blender until smooth.

2.

Heat a nonstick pan on medium-high heat, add some olive oil until the pan is coated (I use kitchen towel to spread the oil out evenly).

3.

Using a small spoon, add drops of the batter to the hot pan until the pan is full. More or less one teaspoon of batter at a time.

4.

Once the pan is full, start flipping the first pancakes over when bubbles appear on the sides and they don’t stick to the pan anymore. This will go pretty fast.

5.

Add some more olive oil and repeat this for what might seem like a billion times but in reality will be like 6 times maybe?

6.

Serve with fruit, coconut yoghurt, shredded coconut and maple syrup.

OR

Go for the full cereal experience and serve with your favourite milk.
